Creamy Chicken Casserole

Ingredients

* 4 cups uncooked egg noodles
* 4 cups cubed cooked chicken
* 1 package (16 ounces) frozen peas and carrots
* 2 cups milk
* 2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
* 2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
* 1 cup chopped onion
* 2 tablespoons butter, melted
* 1/2 teaspoon salt
* 1/2 teaspoon pepper

Directions

* Cook noodles according to package directions. Meanwhile, in a large bowl, combine the remaining ingredients. Drain noodles; add to chicken mixture.
* Transfer to two greased 8-in. square baking dishes. Cover and freeze one casserole for up to 3 months. Cover and bake remaining casserole at 350° for 30 minutes. Uncover and bake 10-15 minutes longer or until heated through.
* To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before cooking. Cover and microwave on high for 10-12 minutes or until heated through, stirring twice.

My notes: If you do not want double the recipe to freeze just half the ingredients. Also cook your chicken in some spices like garlic powder or chicken rub it will make the chicken that much better and add more flavor. Makes great leftovers!

  1. This looks pretty good Ashley and I have been looking for something to do with egg noodles. My husband's grandfather used to work for Inn Maid Noodle and they sent us 12 bags of noodles as part of our Christmas. That's a lot more than I would usually use in a year, but best not to try hanging on to them since you never know when you'll be leaving an overseas post and then I'd have to toss them or give them to someone so I guess we'll be eating lots of noodles.

  2. Beej- It was really good. When I make it I season the chicken now instead of no seasoning. The first time I made it, it was alittle bland from no seasoning. Alittle garlic powder went along way in this recipe!

    That is a ton of noodles! You could make home made chicken noodle with em. I will research and try to find another recipe using egg noodle. Happy New Years

  3. I made this tonight and added garlic powder to my mixture plus I sauteed the onion :) I also added crumbled ritz crackers as a topping padded with some butter all over the top. Can't wait to try it...5 min till it comes out of the oven. Thanks Ash for all your amazing recipes.
